Totally random picture of the sky, and yay for having a car! For being able to do simple things like pick up groceries or drycleaning or renting a movie without having to plan your day around it.
Today I made maybe the best soup that I've ever eaten. And it's my own recipe, kind of.
Corn and Crab Bisque
Ingredients
4 tbsp. butter
1/2 c. onion, chopped
1/3 c. celery, chopped
1/3 tsp. garlic, minced
2 tbsp. flour
15 oz. chicken broth (1 can)
15 oz. sweet corn cream-style (1 can)
1 c. heavy whipping cream
8 oz. crab meat
1/4 tsp. liquid crab boil
salt
pepper
- Melt 2 tbsp. butter in sauce pan. Add chopped onion and celery. Cook until soft (about 10 minutes).
- Stir in flour. Cook for 2 minutes.
- Stir in chicken broth, corn, crab and liquid crab boil. Sprinkle in salt and pepper. Simmer for 15 minutes.
- Remove from heat. Stir in cream and remaining butter. Let sit for 15-30 minutes.
